Rendang Ayam Hari Raya Special

Ingredients

  • 1 whole chicken, cut into pieces
  • 3 stalks lemongrass, white parts only, bruised
  • 6 kaffir lime leaves
  • 2 turmeric leaves (optional)
  • 500ml coconut milk
  • 2 tbsp kerisik (toasted coconut), pounded
  • Salt and sugar, to taste
  • Oil, for frying

Spice Paste

  • 10 dried red chillies, deseeded and soaked in hot water until soft
  • 5 fresh red chillies, deseeded
  • 10 shallots
  • 5 cloves garlic
  • 5 candle nuts (buah keras)
  • 1 inch ginger
  • 1 inch galangal

Instructions

  1. Blend spice paste ingredients together in a food processor until fine.
  2. Heat oil in a pot and fry the spice paste until fragrant.
  3. Add lemongrass, kaffir lime leaves, and turmeric leaves, and fry for another minute.
  4. Add chicken pieces and fry until browned.
  5. Pour in the coconut milk and bring to a boil.
  6. Add kerisik and stir well.
  7. Lower heat and simmer until the chicken is tender and the sauce has thickened.
  8. Season to taste with salt and sugar.
  9. Serve hot with steamed rice and sliced cucumber.
