And let me tell you, it tastes absolutely fantastic. I stumbled upon it while browsing the internet and the image of the dish caught my eye; I knew I had to give it a go. So without further ado, let me share with you the recipe and walk you through the process.

What you'll need:

  • 200g yellow noodles
  • 50g bean sprouts
  • 2 eggs
  • 5-6 diced water chestnuts
  • 3-4 sliced shallots
  • 5-6 sliced garlic
  • 4 sliced chillies
  • 10 prawn wantans
  • 1 tsp of soy sauce
  • 1 tsp of oyster sauce
  • 1 tsp of sesame oil
  • Salt and sugar to taste
  • Cooking oil

Instructions:

Step 1: Cook the noodles in a pot of boiling water for 2-3 minutes, then rinse it with cold water and set aside.

Step 2: In a separate pan, heat up 2 tbsp of cooking oil and fry the shallots, garlic and chillies until fragrant.

Step 3: Add in the diced water chestnuts and prawn wantans, cook for 2 minutes before adding in the bean sprouts, soy sauce, oyster sauce, sesame oil, salt and sugar.

Step 4: Push the mixture to the side of the pan, crack in the 2 eggs and scramble it before mixing it together with the rest of the ingredients.

Step 5: Add in the yellow noodles and stir fry everything together.

Step 6: Dish out and serve hot. Perfect as a meal on its own or as a side dish.
